I know it was windy all day long but I think the wind had died down in the evening somewhat. I noticed the flight because it overflew me and sounded a bit funny (a bit like a Transall C-160, which is uncommon here) so I checked. I noticed a rather steep climb with associated loss of speed, a rather "non-straight" departure course. My location is the dot near 21:03:11 in the screenshot below...

I just checked the METAR for the airport for the time: EDDN 011950Z 25015KT 9999 -RADZ BKN019 07/05 Q0996 TEMPO 25020G30KT

Yeah, ok, 15 knots from 250, temporarily with gusts up to 30... yeah, might explain the speed. Still, I think the pilots had a bit of an exciting time up there, otherwise I'd have expected them to fly straight...

Surface winds don't equal winds aloft.
I'd expect the wind at 3000 ft be double or triple the surface wind, it's not uncommon with storms.
For aircraft that transmit the true airspeed / heading info and if ATC interrogates for it, readsb / tar1090 and so adsbexchange will display winds aloft.

Often aircraft take off using a fixed heading.
With wind from 250 the aircraft gets pushed north and the track looks a bit wonky.
All that while the aircraft nose was pointing runway heading.

Once a bit further up they engage navigation that will follow a certain track .... which is in line with the runway again.

All that typically means the ride is a bit bumpy but not necessarily.
But the wind would have the changed quite a bit according to ground speeds ... so yeah you need to watch the airspeed which is the pilots task ;)
Bit of wind change is to be expected!
